Peel potato into a 12 muffin tin until it’s about 1/2 full. Or use hash browns. Press potatoes in.
Top with a small pat of butter.
Bake at 450 for 15 min or until golden brown.
Mix 8 eggs, splash of milk, 1/2 cup bacon crumble, 1/2 cup cheese shreds, salt and pepper into bowl and whisk until smooth. Pour over potato base and bake another 15 min at 350.
eggs will puff up while cooking.
My regular muffin tins made about 4 bite breakfast – food with a fork.
Could use a pie crust instead of potatoes for traditional quiche. And can use any omelette style toppings and seasonings with these.
