Single serve Quiche

Think omelette.

Peel potato into a 12 muffin tin until it’s about 1/2 full. Or use hash browns. Press potatoes in.

Top with a small pat of butter.

Bake at 450 for 15 min or until golden brown.

Mix 8 eggs, splash of milk, 1/2 cup bacon crumble, 1/2 cup cheese shreds, salt and pepper into bowl and whisk until smooth. Pour over potato base and bake another 15 min at 350.

eggs will puff up while cooking.

My regular muffin tins made about 4 bite breakfast – food with a fork.

Could use a pie crust instead of potatoes for traditional quiche. And can use any omelette style toppings and seasonings with these.

Banana Bread

Mixed first till smooth

• ¼ cup (2floz/60ml) flavorless oil (canola, vegetable, sunflower oil)

• 2 large eggs

• ⅓ cup (21/2floz/75ml) milk

• 1½ teaspoons vanilla extract

• 3 medium very ripe bananas

Added on top without mixing

• 1½ cups ( 71/2oz/ 225g) all purpose flour

• 2 teaspoons baking powder

• ¼ teaspoons baking soda

• 2 teaspoons cinnamon

• 1 teaspoons salt

• ⅔ cup (5oz/150g) sugar

• ¾ cup (2¼oz/67g) rolled oats (preferably quick-cooking)

Mixed until just incorporated

Took everything in me to not add walnuts Just In Case it goes to school or daycare.

Baked 50 min at 350F in well greased silicone pan.

Muffins

1/4 cup ripe banana

1/4 cup olive oil

1 cup 3.25% milk

1 egg

Blend

1/2 cup sugar

2 cups flour

3 tsp baking powder

1/2 tsp salt

Mix until incorporated only

Add 1 cup frozen mixed berries OR 1 cup shredded cheese.

Spoon into 12 muffin cups

Bake at 400F for 25 min

Or 1 cake pan and bake 45 min

Less dishes pasta

Order of content seems important:

1 lb frozen hamburger/pork mix in chunks

1/2 cup diced onion

1 large can tomato sauce

2 cups frozen veggies / corn

2 tbsp oxo beef

1 tbsp oregano

1 tsp paprika

1 tbsp garlic powder

1/4 tsp red pepper flake

1 can (use sauce can) water

Stir mix ensuring to leave meat on bottom

4 cups uncooked pasta (water/sauce should just cover the pasta to prevent uneven cooking)

Used meat setting for 15 min – took forever to pressurize.

Serve with garlic toast.

Left over stuffed cannaloni

Dice 1 handful precooked turkey

Dice 1 handful precooked chicken breast

1 box stove top turkey stuffing

1/3 cup miracle whip

1 tsp paprika

1 cup cooked mixed vegetables

Mix the above and stuff into precooked canolli shells

Place single layer into casserole dish

Mix 2/3 can water and 1 can broccoli cheddar soup when smooth pour over casserole dish.

Sprinkle with paprika

Cover with foil

Bake at 350F for 30 min

heat 15 min at 350F uncovered or until bubbly

Beef stew

1 lb steak bites

2 lbs potatoes

1/2 lb carrots

1 can kidney beans drained

1 can 5 bean mix drained

Whisk together:

1 pinch red pepper flakes

2 beef bullion cubes

1 tbsp onion powder

1 tbsp garlic powder

4 cups water

Cook in instapot on chicken for 1 hour

Works good puréed for baby too

Serves 2.5 twice and a week of baby mush

Bacon wrapped chicken

Line pan with foil

Lay out 4 pieces of bacon

Add chicken breast

Top with handful of mixed cheese and handful of mushrooms

Wrap bacon around chicken cover loosely with foil

Cook at 350 for 45 min then broil for 10-15 uncovered until internal temp is 83c

Serve with rice or potatoes

In large pot

1 large can Diced tomatoes

2 cloves pressed Garlic

1 large can Tomato sauce

1 Diced Onion

1 tbsp Rose Mary

1 tbsp Paprika

Ketchup 1 cup

Boil vigorously

Add pre cooked diced bacon

Any veggies (frozen peas work well)

Boil until veggies cooked

Add 1 L whipping cream (35%) and simmer on low

Add pepper to taste at the end.

Pancakes

Makes 7-9 larger pancakes. Or double this and use a large cookie scoop to make dollar cakes for your commute.

• 1 1/2 cups all-purpose flour

• 1 1/2 teaspoons MAGIC Baking Powder

Bank set the wrong date?

Sometimes when you download bank statements into excel you get weird dates, particularily January to September for no apparent reason. This vba helps with converting them. Not recommended for dates in the first decade of this century.

Year – pulls out the year in a date

day – pulls out a day in a date

month – pulls out a month in the date.

=if(year([Cell in Excel])-year(now())>=-1,..,..) this one checks if the year of the date you’ve provided is more than a year different from the year of the current date. This helps in catching those dates formatted in the mac standard (the stuff showing as 2008).

Date(Y,M,D) takes numeric values for year, month and day to create a date.
